Brie de Meaux, hailing from the town of Meaux, is a French cheese crafted in the Ile-de-France region, just east of Paris. Honored as "Le Roi des Fromages" (The King of Cheeses) at the 1814 European Tournament of the Congress of Vienna, it earned acclaim for its unparalleled flavor and texture.
This cheese proudly bears the prestigious AOC label, reserved for 40 French cheeses, ensuring both quality and adherence to specific production standards. Made with unpasteurized cow's milk and traditional animal rennet, the curd undergoes meticulous hand-ladling into molds, followed by dry salting and a slow ripening process at controlled temperature and humidity. Aging lends the cheese distinctive red or brown patches on its rind, enhancing its character. The taste is a delightful combination of milky richness, sweet, and buttery flavors.
