A remarkable handmade cheese, is crafted by Ann Dorward at Clerkland Farm in Stewarton, Ayrshire. Using milk from the family's Swiss Saanen goats, Bonnet undergoes a six-month maturation process, resulting in a thin rind. During this period, the paste evolves, becoming softer, smoother, and creamier.
